On Friday night, my roommates and I hosted our first Christmas party in our home. We absolutely love having a space to entertain all of our favorite people in Nashville, and this weekend was no exception. Knowing that it would be a long day and likely a late night, on Friday morning I prepped a few brunch items that we could reheat the next morning.
I made a egg and potato breakfast casserole with sun-dried tomatoes, a big fruit salad with a little bit of mint, gingerbread loaf with the most delicious glaze (my first time using a loaf pan!), and little sausage and cream cheese bites. My family has been using Pyrex dishes for as long as I can remember, so I always reach for them when prepping food, especially around the holidays. The best part, though, was having the easy lids to pop on and off. It made it easy to stack things in our packed fridge and keep the food fresh for the next day. I’m already looking forward to next time I get to prep and cook it all in my Pyrex. This year, it was while watching my favorite Christmas movie, Jack Frost, and listening to this Christmas playlist which made for the nicest way to get into the holiday spirit.
